Winter is upon us. The weather is cold outside. The lure is to go play in the snow. But when we come inside we want to warm up! During cold Winter evenings, I enjoy warming up with a hot yummy dish! You will find a pdf. attached to this newsletter with 10 yummy recipes to warm and fill your family this winter.

10 Yummy Dishes  

1. Goff Standby (Spanish Rice Casserole)

My sister-in-law dubbed this "Goff Standby," because it was made of what was on hand, when she could not figure what else to fix for dinner.  She was also introduced to this dish by my mother-in-law. Later we all discovered that the recipe originated with Great Grandmother Tuttle, not Grandma Goff, but nevertheless the name stuck!

1 Cup Long Grain White Rice, Uncooked (I prefer Jasmine Rice)

2 Cups Water

1 Teaspoon Salt

1 Tablespoon Butter


1 Pound Ground Beef

1 Medium Onion, Diced

1 Pound Can Stewed Tomatoes

18 Ounce Can Tomato Sauce

2 Pinches of Basil

Salt, Pepper, and Garlic Powder to Taste.


1 Cup Grated Cheddar


Make the rice first. Bring water, salt, and butter to a boil, stir in rice, return to a boil, place on lid, reduce heat to medium-low and simmer 20 minutes.

While rice is cooking, brown the beef, onion, add seasonings, and drain of fat. Add tomatoes and tomato sauce and heat thoroughly. Put half the rice on the bottom of a greased casserole dish. Cover the rice with half of the meat mixture. Sprinkle 1/2 cup of cheese evenly over the meat mixture. Repeat with rice, meat mixture, and top with cheese. Cover with a lid or foil. Bake at 350 for 30 minutes.

2. Donna's BBQ Pomegranate Chicken


1 package Zesty Italian Dressing Mix

1/4 cup Pomegranate Vinegar

1/2 cup vegetable oil

3 Tablespoon Water

4 plump boneless skinless chicken breasts


Chicken Breasts are thick, slice them in half to make them thinner, this will give you 8 breasts. Marinate chicken in Pomegranate Italian Dressing for 30 minutes. BBQ marinated Chicken breast, on medium heat, until cooked and tender. (Yes, we BBQ even in Winter). This can also be baked in the oven. These cook fast because they are thin, so watch out.

3. Chinese Chicken Casserole


Can of Fried Chinese Noodles

2-3 Cups of Cooked De-boned Chicken or Turkey (Cut into Bite sized Pieces)

4 Oz. Can of Mushrooms, drained

1 Chopped Onion

1/2 Cup Cashew Nuts

3 Oz. Can Sliced Water Chestnuts


1 Can  Cream of Chicken Soup

1 Can Cream of Mushroom Soup

1 Cup Milk

2 1/2  Tablespoons Soy Sauce


Grease a 9 x 13 dish. Layer separate layers of 1/2 can of fried Chinese noodles, Chicken, mushrooms, onions, cashews, and water chestnuts in the baking dish. Mix the sauce ingredients together. Pour over layered ingredients. Top with 1/2 can Chinese noodles. Bake at 325 degrees for one hour. Let stand for 15 minutes before serving. Serve with rice. Enjoy!

4. Chicken Almond Bake

This was my Aunt Opal's recipe! She made this dish when we visited her back in 1978, the summer after we married. So, tasty!


Can of Fried Chinese Noodles

Casserole Mixture:

2-3 Cups of Cooked De-boned Chicken or Turkey (Cut into Bite sized Pieces)

4 Oz. Can of Mushrooms, drained

1/2 Almonds, Slivered

1 Small Onion, Chopped

1 Can  Cream of Celery Soup

1 Can Cream of Mushroom Soup

1 Small Can Pimentos

1/4 Cup Milk


Butter an oblong baking dish. Spread half a can of fried Chinese noodles on the bottom of the baking dish. Pour casserole mixture over noodles. Top the casserole with 1/2 a can of fried Chinese noodles. Bake at 350 degrees for 30 minutes. Serve with Rice.

5. Donna's Chili 


2 Lb. Ground Beef

1/2 Onion, Diced 

1 Lb. Can Chili with Beans and Gravy

1    8 Oz. Can Tomato Sauce

Grated Cheese

Salt and Pepper to taste.


Brown beef and onion together. Drain. Add Beans, Tomatoes and tomato sauce. Simmer 30 minutes. Salt and paper the chili to taste. Serve with grated cheese.

6. Donna's Chili Burritos

This is a quick meal. I used to call it Mom’s Night-Out Supper. It can be made with canned chili, or with leftover Donna's Chili. This reheats well.


Leftover Homemade Chili or 1 can Chunky Chili and 1 Can 

Homemade Flour Tortillas or 1 Package Flour Tortillas 

Grated Cheese

Shreaded Lettuce


Preheat oven to 360 degrees. Heat the chili in a sauce pan on the stove. Scoop up chili with a large serving spoon, about 1/4 cup chili onto a tortilla, sprinkle with cheese, roll, and place in a 9 x 13 baking dish. Continue until all chili is used. Top with cheese and bake 15 minutes. Serve with grated cheddar cheese.

7. Donna's Ground Pork Casserole


2 Pounds Ground Pork, Cooked and Crumbled

4 Cups Cooked Rice

1 Can Cream of Celery Soup

1/2 Cup Cheddar Cheese Shredded

1/4 Cup Almonds, Slivered


In an 9 x 13 baking dish layer rice; next layer cooked ground pork and cream of celery soup. Top with cheese and almonds. Bake at 350 degrees for 30 minutes.

8. Donna's Honey Rosemary Citrus Chicken


1 Chicken, Whole or Cut-up

1/4 cup Honey

Juice of a Lemon, Lime, Orange, or Mandarin Orange



Place cut up rinsed chicken in a lidded baking dish. If you do not have a lidded baking dish you can line a dish with foil then when chicken is prepared for oven, top with foil and seal edges. Pat chicken dry with paper towels. Pour honey in a liquid measuring cup. Squeeze the juice of a lemon, lime, or orange into the honey; stirring until thin and runny. Pour over chicken. Sprinkle top of chicken with Rosemary. Place in a covered baking dish, a soaked clay baking dish with a lid or seal in foil. Bake in the oven at 350 for 1 ½ hours.

9. Chicken Adobo

This is a Filipino recipe, from my youth in Hawaii. I obtained this recipe from the wife of my mother’s boss, when I was in High School. This is one of the first dishes I teach my children to make. This is a savory, tasty dish. 6-8 Pieces of Chicken.


6 - 8 Pieces of Chicken

6 - 8  Peppercorns

6 - 8  Bay Leaves

1 Garlic Clove, Crushed  or 1/8 Teaspoon Garlic Powder

1/3  Cup Soy Sauce

3 Tablespoons Apple Cider Vinegar


Place chicken in a foil lined baking dish, a covered baking dish, or a covered clay pot baking dish. Pour soy sauce, vinegar, and garlic over chicken. Place a bay leaf and a pepper corn on each piece of chicken. Seal in foil, or bake in a covered dish at 350° for 2 hours. Remove foil or lid, the last 15 minutes, to brown chicken.  Serve with rice.  We also serve with French cut Green beans that we have added a cube of beef bouillon to the liquid, then simmered the beans in the liquid.

10. Donna's Sunday Roast


3+ lb. Frozen Beef Roast or Pork Roast  

1/2 Cup Soy Sauce


There is no need to thaw the roat first. Place frozen roast baking dish, pour soy sauce over roast, and cover tightly with a lid. Bake at 275 degrees for 6 hours. Shred roast and serve with rice or mashed potatoes.
