Newsletter: Cold Outside? Warm up with Tasty Soups!

Winter is upon us. The weather is cold outside. The lure is to go play in the snow. But when we come inside we want to warm up! During cold Winter evenings, I enjoy warming up with a hot bowl of tasty soup!
5 Tasty Soups
Donna's Potato Soup
This soup is creamy and delicious; great for a lunch. This soup is mild on the stomach and great for someone who has been ill and is recovering. This is also just a great warming soup on a cold day.
Serves 6-8
Ingredients
4 - 5 medium potatoes, peeled and diced
Water (cover potatoes by one inch)
1 Yellow Onion, diced
1 Stick Butter (1 Cup)
Salt and Pepper, to taste
1/2 Cup Milk (+ or-)
Directions
Cover potatoes with water and bring to a boil. Lower heat and simmer until tender. Sauté onion in butter until onion is translucent. Combine onions and potatoes. Add milk to desired consistency. Add salt and pepper to taste.
Donna's French Onion Soup
Serves 6-8
Ingredients
4 Large Red Onions, sliced and separated
1/4 Cup Butter (half a stick)
5 cups Beef Broth (can be made from Beef bouillon)
1 Teaspoon Worcestershire Sauce
1/2 Pound Grated Swiss Cheese
1/2 Pound Grated Whole Milk Mozzarella Cheese
1 Cup Grated Parmesan Cheese
French bread, sliced and toasted
Directions
Sauté onions in butter until lightly brown (10-20 minutes). Add broth and Worcestershire sauce. Bring to a boil and boil 10 minutes. Put into oven proof bowls. Top with bread and cheese. Place bowls on a baking sheet. Place in a hot oven for a few minutes to melt cheese. Serve hot.
Donna's Tomato Florentine
Serves 4-6
Ingredients
1 Can Tomato Soup
1 Can Italian Stewed Tomatoes, Diced
1 Soup Can Full of Cream or Milk
Pinch of Basil
Directions
Combine tomato soup, diced stewed Italian tomatoes, and dilute with milk or cream (use the empty soup can to measure a can of milk or cream). Mix well and heat thoroughly. Add a pinch of basil. This soup, made with cream is very filling! Serve a cup of soup with a 1/2 Grilled Cheese Sandwich.
Donna's Taco Soup
Serves 4-6
Soup Ingredients
1 Pound Ground Beef
Seasoning Salt (McCormick's no MSG)
1 Pound Can of Kidney Beans
1 Yellow Onion, diced
1 Can Italian Stewed Tomatoes
1 8 Ounce Can of Tomato Sauce
1/4 Cup McCormick Taco Seasoning (1 Package Taco Seasoning)
3 Cups Water
Toppings
Grated Cheddar Cheese (or Combo Cheddar and Jack Cheese) and Frito Corn Chips (or Scoops)
Directions
Brown ground beef with onion and then drain off fat. Season with season salt. Add all soup ingredients together. Simmer 30 minutes. If soup is too runny, sprinkle with a few tablespoons of dried potato flakes. They will thicken it without adding to the flavor. Serve, topped with cheese and Fritos.
Donna's Crema de Pollo Zuppe de Verdure (Creamed Chicken Soup and Vegetables)
This is quick and a versatile dish, quicker than its name! Once combined this is served over toast, but it can also fill a pastry for a pot pie; be rolled in a tortilla, topped with cheese, and baked; tossed with fettuccine noodles; made into a rice casserole/ served on a bed of rice; add cubed boiled potatoes for a chowder; drizzled over biscuits; served in a hard roll; or elegantly served over puffed pastry.
Serves 6.
Ingredients
1 cup cubed, cooked chicken (great for left over roast chicken or turkey)
2 Cups White Sauce (Recipe Below) or 1 Can Cream of Chicken Soup
(If using Canned Soup add 1 Cup Water or 1/2 Soup Can of Water )
2 carrots sliced into thin circles
2 celery stalks sliced into thin moons
1 Small Yellow or Red Onion, diced
Season with Season All (No MSG)
Directions
Simmer meat and veggies in white sauce or soup and water until carrots are tender. Add water to desired consistency. Season to taste and serve in a bowl or add less water and serve over toast, open face style.
White Sauce
1 Stick Butter (1/2 Cup)
1/2 Cup Flour or more as needed
4 Cups Milk
Season with Italian Seasoning or Curry Powder (or your favorite herb/spice).
Make white sauce by melting butter and stirring in flour, then adding milk and stirring and cooking until mixture thickens. Season with Italian Seasoning or Curry Powder.
